At Samuel-de-Champlain, we have created an outdoor learning environment. This project has been ongoing for the last 4 years. Among our several projects, we’ve created a community garden (10 raised beds), and built a greenhouse and outdoor classroom. During the 2018 school year, I wanted to implement a garden project with my high school students. We've added a little entrepreneurial twist to this project. With the expertise and hands-on help of Kim Osepchook of Axil Gardens, we've grown some crops indoors (with our light kits) and outdoors (utilizing our greenhouse and community garden).

My students have learned so many things including collecting and saving
seeds, preparing the raised beds, how to grow (sprouts, bulbs, garlic, herbs, vegetables, flowers), garden maintenance, winterizing the gardens and how to prepare meals with the food they grow. Some of the students have even explored different foods they wouldn't have imagined.

Kim is a real treasure to work with. Her passion for gardening, her creativity and going above and beyond for our food security are definitely qualities that will make her an asset to any gardening project!
